There's no ne of that name making a contribution on this question, and needless to say it goes without saying that " entitlement" is statutory, which AMM failed to note, and neither is there any such concept as a " leaving holiday" and the whole of AMM's answer is exrtremely misleading.

It's quite simple though: this is about an employee leaving a company who gets a bonus for "unclaimed leave", i.e. leave allowances outstanding at the time when they leave the company. As for how you put this in English... hmmm. "Departing employee unclaimed leave bonus" maybe? Some other English person with more English-language HR familiarity will probably suggest the right term in due course.

I have carelessly omitted the whole phrase which is " pécule de vacances de départ" and the whole sentence is "SCI règlera à l’employé, incessamment, le pécule de vacances de départ, sous déduction des retenues légales applicables". Thank you.

pécule ... simply means "gratuity", usually in a military or prison context.
More ambiguous is this "de départ". Does it mean "initial"? In another context it could be referring to an employee leaving a company. But "vacances de départ" kind of rules that out.
In the stuff you've quoted the phrase "pécule de départ" does not occur.
Can you please provide A LOT more of the surrounding text so people can try to make sense of it?

The only time someone can get paid in place of taking statutory leave (known as 'payment in lieu') is when they leave their job. Employers must pay for untaken statutory leave, even if the worker is dismissed for gross misconduct.
