I may be wrong, but I think 'mat' is simply a literal translation of the French 'natte': een 'mat' (JONCHÉE) 'en osier ou en roseau servant de présentoir pour certains fromages'.

: De brie wordt NIET geperst maar op een schuine plank gelegd om uit te lekken, de stro mat is alleen ter presentatie, vooral de Brie van Coulommiers. Er bestaan 4 Brie's : Meaux, Melun, Coulommiers, Montereau
