I understand that the aroma will deteriorate somehow, but I'm not sure what the exact meaning of the last few words is. I know that "in die Breite gehen" can mean to put on weight, to expand etc. but I'm not sure if this is what is meant here.

The higher the temperature, the higher the evaporation rate. As the alcohol evaporates, it takes some of the aroma with it.
