Lida, no tengo mucha idea, pero he encontrado esto. No es de fuente segura, pues de un forum, pero en caso de que no encuentres nada más...

Tal y como yo lo entiendo, los dos tipos de gallos mencionados son gallos de pelea. El primer tipo, el gallo de pico, es un gallo que se enfrenta al contrincante meramente con el pico, es decir que no vanm armados con nada más. Mientras que el gallo de navaja debe llevar espuelas o algun otro tipo de accesorio....
Sólo es una idea, dado el contexto que nos das.

strong-beaked rooster / razorcock

coining some new terms here, heh.

i'm not sure if you'll find suitable translations of these. perhaps a footnote explaining that they are varieties of fighting cocks, and maybe giving a literal translation would work.
