How bizarre... I posted a discussion 2-3 hours ago, but somehow it didn't "stick".

Like Jonathan, I am not familiar with liming in the beverage industry (am not a liquor maker...), but if it's used in sugar refining process, then it may make some remote sugar/alcohol sense.

I am actually a liquor producer (www.jaddess.com) and have not come across a liquor making process that uses lime.
On the other hand there is a tanning process that uses liming liquor (see http://www.freepatentsonline.com/4310328.html) and it is also part of the sugar refining process.
Are you sure the material you are translating is about making a beverage?

The second link - yuck, I'm never touching an unknown alcoholic drink. and yes the material is a manual from a very well known food manufacturer in Israel and deals with the production process of a beverage distilled from raw liquor
