la panatura è fondamentale che sia fritta, questo è un odore delizioso di fritto, va indicato,anche girando la frase con frying (la pastella cruda odora di pittura e non accende i sensi)
Magari qualche golosone può trovare una soluzione migliore

questa è la traduzione della ricetta originale delle olive ascolane, sicuramente panate, per nulla soffici

Per cui, secondo me, soffice si riferisce all'odore dolciastro che sviluppa dall'olio in frittura, meglio ancora dalla pastella, fragrante

Però soffice può essere solo il risultato (morbido dentro) perchè è la pastella che è soffice, panato pangrattato secco! Però può essere un modo pubblicitario perchè le alici/acciughe in mobida panatura noi le chiamiano gratinate, no panate!
however the term "soffice" i.e. soft/tender is not included in your suggestion. It does sound odd to an italian as well since it refers to touch and not to smell, would you avoid it?
