Leaf-stripping is a technique that many viticulturists use to increase berry exposure, hence color and sugar development, mainly in red wine grape varieties. It also can be used to increase the air circulation in and around the cluster, to prevent bunch rot and other types of diseases that thrive in moist conditions.

You can also consider using the term ***DELEAFING*** which oenologists adopt in their technical parlance. It sounds more technical than ***leaf removal***.
***Deleafing***
Experience has shown that grape quality is directly related to the amount of sun and air circulation that the developing bunches receive. Grapes grown in a warm shady environment do not develop fine flavors and aromas, and are often subject to diseases such as mildew and bunchrot. Grapes grown in the right environment of sun and air exposure develop clearly superior flavors and aromas. To make this happen the vineyard workers remove some of the leaves around the grape bunches. Normally more ****leaves are removed**** on the shady side of the vine. Special care must be taken on the sunny side. If too many leaves are removed and the grapes are exposed to too much sun they can sunburn. Sunburn can contribute a raisin like off flavor that the winemaker does not appreciate. ****Deleafing**** is done right after grape blossom after the new fruit appears. This is normally in mid to late June.
