I've seen a documentary about Hainan recently, and I must say it looks tempting with the sea and warm weather. Sorry but I have to side-track to food now. In Singapore one of our most famous dishes is Hainanese chicken rice. You can have "white chicken" ("bai ji") or "roast chicken" ("shao ji") with the rice. Hey, the rice is not just plain white rice. I don't really know how to make that chili sauce, but I think it involves pounding red chili, throwing in some spices, adding a little chicken soup and sesame oil. The set meal you see here is probably what you can find in nice restaurants. Be prepared to part US$10 for this. However if you don't mind the crowd and self-service at food malls, you can easily get a set meal at around US$2. One set comes with the rice, a plate of chicken (pay more if you want drumsticks!), cucumber slices, chili sauce and a bowl of soup! My mum is good at making Hainanese chicken rice. In fact, two days ago I called her to say that she must cook chicken rice the first day I'm home. I'm going to wolf down three plates!! I don't care........................!! I'll think about diet later!
